How to drink tea

Knowing the characteristics of tea will expand your enjoyment even further

There are many types of tea, even though they are all green tea. The way to drink it and the way to enjoy and taste the tea in its original form vary slightly depending on the tea leaves.
At Kanehachi, our exclusive Japanese tea instructors are at the center of our efforts to teach as many people as possible the correct and fun way to drink and enjoy tea by taking advantage of the characteristics of tea leaves that may seem known but are surprisingly unknown, so that they can enjoy their relaxing moments even more deliciously.

How to Brew and Enjoy Sencha

    Fill teacups for each person with hot water and let it cool beforehand. (Cooling the water in teacups will also give you an idea of the appropriate amount for one person.)

    Measure out the tea leaves and put them in the teapot. The amount of Sencha tea leaves for 3 servings is roughly 2 tablespoons.

    Pour the cooled water into the teapot, cover it, and wait for about 1 to 1.5 minutes for the tea to infuse. (The water should be warm enough that steam rises when you gently shake it side to side = around 70℃ is the ideal temperature.)

    Pour small amounts evenly into the tea bowl, circulating it around until the last drop. The tea will be weak at first and will become stronger as you pour, so the key is to pour the tea evenly so that the strength is even.

    Wipe off any dripping tea and place the tea in a tea tray.

A delicious tip to know

The umami components of tea start to dissolve at around 60℃, and the astringent components start to dissolve at around 80℃, so remember that! New tea and high-quality tea can be extracted more umami by cooling it further than the appropriate temperature.

How to make and enjoy cold tea

    Place about 15g of your favorite tea leaves into a filter-in bottle.

    Fill the bottle with mineral water or tap water until it is about 90% full.

    Finally, put the lid on.

    Chill in the refrigerator for 3-6 hours. (The amount of tea leaves and time depend on the green tea you are using.)

    Your delicious cold-brewed green tea is ready.

A delicious tip to know

Epigallocatechin, a new catechin component extracted in large quantities by cold brewing, boosts the body's immunity. It has almost no bitterness or astringency, and has a very mellow and deep flavor with plenty of umami and sweetness!
